In 2022, professional distiller Kristine Hui was working abroad at a distillery in Bhubaneswar, India. One afternoon, a coworker mixed a simple lemonade with carbonated water, fresh herbs, lemon juice, and sliced chili peppers. The first sip stopped her in her tracks. Bright. Refreshing. Unexpectedly spicy. It was unlike anything she’d tasted before.
On a later trip to Mexico, Kristine noticed that there were spicy fruit, candies, and even desserts. She loved how other cultures embraced heat in their food and drinks, and wondered why this wasn't more common back home in Canada. So she started experimenting.
Back in her kitchen, Kristine spent countless late nights tinkering with spicy drink recipes, chasing the perfect balance of sweet, tart, and spicy. After many trials, she landed on her signature spicy lemon formulation — the flavour that would eventually become Hot Fizz.
At first, she imagined it as a spicy soda and brought early batches to local farmers’ markets. But as people tasted it, she realized something important: this wasn’t just a soda. It was a spicy mocktail — bold, bright, and unexpected.
More than 3.5 years after her first unforgettable sip in India, Kristine released her inaugural Hot Fizz flavour in May 2026.
